I think Martin Sheen is Spanish (From Spain not Mexico) and Irish or something. So if Emilio is playing a white boy, it makes sense since he is white.

A Spanish last name doesn't make you Mexican. There's a whole country of white people with Spanish last names, its called Spain.

Emilio directed this one movie in the 90's that starred him and his dad about a young man back from Vietnam war and dealing with his family and dad especially.  I saw it a long time ago but I remember it being very powerful and emotional but forgot what it was called, and I think another one about a dad (Sheen) whose son (Emilio) get's arrested for juvenile thing and the dad leaves him in prison to teach him a lesson, but hings get crazy....that's all I remember.  But they were very good movies, also about father-son relationship.
